Sweet chilli salmon skewers

Hallu…duh lama ni ga update kitchen. Soale mood lagi down, pengaruh sinar matahari yang belakangan pelit banget nerangin Lancaster. Udara tambah dingin. Freezingggg….

Pengen masak yang simple2 aja dan cepat saji, heuhheheh seperti yang satu ini : Sweet Chilli salmon skewer. Cocok ni buat yang lagi pengen simple2 an ^_^.

Ingredients :

300g salmon fillets, cut into 2cm cubes

1/4 cup sweet chilli sauce

You will also need small bamboo skewers

Directions :

1. Marinate salmon with sweet chilli sauce, for -/+ 1 hour.

2. Thread two cubes of salmon onto each bamboo skewer.

3.  Grill for 5-10 mins, both side ( until golden brown).

4. Serve with chips, or anything you like accompanied by some sweet chilli sauce for dipping 🙂

Thai Style-Baked Mackerel

Kalau bulan puasa bawaannya lapar mata:p, ga bisa liat makanan, pasti kepengen. Di pasar jg gitu, kayanya pgn beli macem2. Eh pas lewat di toko ikan, ngliat ikan, kok kepengen banget makan ikan bakar ya, lagian udah lama jg ga masak ikan2an. Ya udah saya beli mackerel 4 ekor, gendut-gendut bok:D:D..hehehe..^_^. Saya untung jg ni, pas lagi ada harga khusus utk mackerel, jadi lebih murah daripada biasanya. Ini ni yg namanya jodoh..ya ga? kekekekke….

Terus, saya mau nyobain resep yg ada di majalah Easy Living ah, ikan bakar ala Thai. Gimana si rasanya, penasaran..:)

Jadilah : Thai Style-Baked Mackerel. Enak..kurang lebih sama ama ikan bakar ala tradisional Indo yang ada di pesisiran pantai ( dekat kampung halaman) ..sippp..

Recipe :

3 garlic cloves, peeled and roughly chopped

2 small green chillies, roughly chopped ( I used, red chillies instead )

2cm ginger, peeled and chopped

4 coriander roots and stems

1 tsp sea salt

1 tsp caster sugar

2 tsp Fish sauce

2 tbsp fresh lime juice

2 whole mackerel

Olive oil, for drizzling

2 fresh limes, halved

Directions :

1. Heat the oven to 200 deg.celcius

2. Using a food processor or crush the garlic, chillies, ginger, coriander and salt until fine.

3. Add the sugar, fish sauce and lime juice and mix until it forms a paste.

4. Rinse and dry the fish an cut three slashes into each side. Brush each side with the paste.

5. Place the fish on a baking tray. drizzle with a little oil. the the lime halves to the tray. Bake for 15-20 mins, or until the flesh is cooked.

6. Serve with steam rice and baby spinach leaves. ( I made sambal, it is a perfect mate for the baked fish :D)
