When youre weary, feeling small,
When tears are in your eyes, I will dry them all;
Im on your side. when times get rough
And friends just cant be found,
Like a bridge over troubled water

Ingredients

1 leek, washed and trimmed

450gr potato, peeled and sliced

1/2 onion chopped finely

A knob of butter

400ml vegetable or chicken stock

salt and pepper to taste

mixed herbs to taste

Single cream or grated cheese (optional)

directions:

Head the butter to soften the onion. Add the stock, potato and leek. Cook until vegetable are soft. Blend or liquidise, add salt and pepper  and mixed herbs if desired. This soup is lovely served with some grated cheese on top which melts, or a swirl of cream. If it is quite thick, thinned using more stock or milk as preferred.
